For my week 1 recipe, my partner wanted me to make something that she could eat on the Optavia diet. I don’t know too much about the diet except there are lots of things to follow, and limits on how much and what type of foods to eat. This is part of the 5 and 1 program (basically 5 soy-based fuelings during the day and 1 Lean and Green meal). This would count as the lean and green meal.
This recipe makes 5 servings, which I believe is 1 heaping cup full. I don’t have many pictures for this recipe, it is a simple crockpot recipe and I literally browned the beef and threw the ingredients into the crockpot, and set it on high for 2 hours.
I did not have fresh cilantro, so I used dried instead. And since I am not on the restricted diet, I added sour cream to mine to make it more creamy. I would have also liked a bit more flavor and would have increased the amount of taco seasoning I added.
Overall, it was a decent soup. It was easy to make but it felt like a diet soup. From the perspective of the one who was on the diet, they said it was very tasty and filling. I am sure I will end up making this again, but because it is easy to make and meets my partner’s dietary restrictions. I would not make this version for myself.

Brown ground beef until fully cooked.
While meat is cooking, place cream cheese, Rotel tomatoes, taco seasoning and ranch seasoning in the slow cooker.
Drain grease from meat and put the meat in the slow cooker.
Stir to combine meat with cream cheese and Rotel.
Pour chicken broth over meat mixture.
Cook on LOW for 4 hours or on HIGH for 2 hours.
Before serving, stir in Greek yogurt.
Divide portions into 5 servings (about 2 generous cups per serving).
Add cheddar cheese (almost 2 tbsp per bowl) and garnish with cilantro (1 tbsp per bowl), if desired.
